It happens when a language imports words from another. If a sound doesn't exist, it gets changed into the closest one possible, which means sometimes words get pronounced in a way that's slightly or even completely different from the original language. 

Here's an example of how English has done that with French words ended in é such as words like café, fiancé, blasé…). That is a a sound that doesn’t exist in English, so we’ve changed it to the closest possibility:
